Chef Roux is a guest at Dom Perignon

The gates of Moet & Chandon

Au Chaunte, Dom Perignon

Yes, those are Champagne Flutes
These are the original design of Champagne flutes.  Their purpose is outdated, but fascinating to learn about.

The gateway to the Dom Perignon's Cave

We are here, in Epernay in the Champagne region of France.

The Cave

The cave is so huge, it is it's own city under the city.

Temporary cork

After over an hour in the caves seeing hundreds of thousands of bottles of Champagne we are off to the Abbey of Saint Pierre d'Hautvillers

Notice the size and shape of the glass Chef Roux chooses to drink Champagne from.  If you have never tried drinking bubbles from a wide mouthed glass, give it a try....
